Jakarta, Indonesia, May 2013 – C’s Steak & Seafood Restaurant welcomes the season of White Asparagus on 6 – 12 May 2013. Executive Sous Chef Christer Foldnes and his culinary team have created this royal vegetable-based menu to enjoy for lunch and dinner. There are two choices of appetisers to try: Pickled white asparagus salad with crème fraiche, lobster and white asparagus foam and White asparagus veloute with blackened salmon belly and parsley oil. If guests come as a group, the White Asparagus sharing platter is a great option served in two variations: Butter sautéed white asparagus with truffle mousseline, chopped egg and chives or White asparagus risotto with parmesan and truffle oil. Three choices of side dishes are also available: Three cheese gratin white asparagus, Butter sautéed white asparagus with hollandaise sauce, and wok fried white asparagus with crab meat and egg white.

Chef Christer recommends the tasty Pickled white asparagus salad with crème fraiche, lobster and white asparagus foam, as starter. “White Asparagus and lobster are a great match and complement each other very well. This is a new interpretation of a classic combination that really brings out the best in both ingredients”, states the Norwegian chef.
For Sharing Platters, Chef Christer also highlights the Butter sautéed white asparagus with truffle mousseline, chopped egg and chives. It is a lovely way of tasting white asparagus, simply steamed and then tossed in butter, very rich yet with a subtle taste.

About White Asparagus
White asparagus has long been considered a delicacy, particularly by Europeans. It is grown under a covering of soil to keep the sun’s rays out, thus preventing photosynthesis and the development of chlorophyll, which causes the green colour found in regular asparagus.
